There's nothing like the scent of spices wafting through the air to get a person into the Christmas mood. In this demonstration baking class you will learn the secrets to delicious Scandinavian Christmas baking.

Finnish pastry chef Miia Mikkila will demonstrate several popular recipes from her homeland and other Scandinavian countries. You will enjoy delicious tastings of the finished products and take home recipes so that you can share these delicious treats with your friends and family in your Christmas entertaining.

The treats may include:

- Piparkakku (gingerbread cookies)
- Joulutorttu (prune pin wheel pastries)
- Joulupulla (cardamom bun with a gingerbread cookie star on the top "Christmas bun")
- Glogi kakku or glogi tuulihattu (mulled wine and prune mousse cake with gingerbread base, similar to a cheese cake but with Christmas flavours or alternatively that same mousse mix makes a lovely profiterole filling. These are just a bit more modern versions of xmas baking)
- Kapykakku (Pine cone cake; sponge cake filled with strawberry jam or prune jam and creamy filling with some rum, iced with marzipan and chocolate into pine cone shape)
- Swedish Vortbrod - dark Swedish bread

Watch and learn as Miia demonstrates these traditional Christmas goodies, and then sample them at the end of the class along with some traditional Scandinavian beverages. A perfect way to spend a Saturday morning and add to your baking repertoire.

About Miia:
Miia is a professional pastry chef who learned her craft in her native Finland. She has lived in New Zealand for several years and was the pastry chef at Jones the Grocer. She now lives in New Plymouth with her partner and is expecting her first baby in December!
