Stirring the Colonial Melting Pot

As Victoria's reign came to an end, Dunedin's cooks began to expand their repertoire of recipes. Traditional British fare still dominated dinners, but colonial cooks were increasingly interested in American cakes and Australian preserves. In the early 20th century we developed our own recipes for baking, and after World War II went on to embrace 'international' dishes for the dinner table.
