Lactobacillus -fermentation is a method of food preservation that also enhances the nutrient content of the food. The action of the bacteria makes the minerals in cultured foods better absorbed by the body. The bacteria also produce B vitamins and enzymes probiotics that will allow your good gut bacteria to flourish, they are beneficial for digestion. As we age, we require a proper digestion as our production of the digestive juices and enzymes decreasing. Traditional fermented foods help the body produce acetylcholine. Acetylcholine is a neurotransmitter that helps increase the movement of the bowel, and can alleviate constipation problems. In addition to improving pancreatic function, which is of great benefit to diabetics, the carbohydrates in lactic acid–fermented foods have been broken down or "pre-digested."
