You will look at the European traditions that have influenced New Zealand winemaking. Subjects covered include: Principal grape varieties and characteristics, the winemaking process, sparkling wine production, viticulture, climate classifications and regional differences, wine labels, closures, faults, ageing, and the storage and service of wines.

You will learn the procedure for how to taste and evaluate wines and the principles that underscore food and wine matching. A day trip to visit to three respected local vineyards on Waiheke Island is included in this course. Graduates receive the NZSFW Certificate in Wine, 2 NZQA unit standards and WSET Level 1 Award in Wines.
