Combine an expansive coastline with two archipelagos islands, the Balearics and the Canaries, you get a wonderful array of fish and shellfish that are all elements synonymous with the Spanish diet. Cooked in the traditional spices of Spain, saffron, known as red gold, garlic, rosemary and pimento are all essential herbs and spices that support and reinforce the flavour in a typical Mediterranean diet. In this class prepare Prawns, prosciutto, pimento mayonnaise, baby leaf salad and Market fresh fish, eggplant, roasted olives, grilled red onion and feta crumb, lemon and green pepper dressing
