From the milpa to your table
In a hands-on experience you’ll learn how to create basic Mexican recipes featuring corn, Mexican chillies and spices. Chefs Rodrigo Quirarte and Luis Guajardo will cover the fundamental concepts of Mexican cuisine and demonstrate techniques that you’ll be able to replicate to create a range of authentic dishes at home. Sit down for an after-class dinner and enjoy the food made with the methods you just mastered.
The three areas of focus for the workshop are:
Corn – The process of nixtamalisation and how to prepare corn for tortillas, sopes, gorditas, tamales, quesadillas, tlacoyos, panuchos and many more delicious dishes.
Salsas – Fresh, grilled or roasted, spicy or mild, salsas are the best compliment to any Mexican dish and a must-have on every Mexican dinner table.
Adobos – Adobos are thick, intense, punchy marinades that will transform any meat or vegetable into the taste of Mexico. With a handful of ingredients, some knowledge and a little creativity you can create a number of authentic flavour profiles.
You will each receive a souvenir of the night – a lovely package of Mexican chillies and spices – so you can start cooking Mexican-style at home right away.
