Learn to Make Vegan Sushi
Friday 3rd of June 530 pm
$45 student (with ID, please show on the night), $50 standard
Sushi is all about the fish. Right?

The idea of ‘vegan sushi’ would probably annoy most sushi chefs, but sushi is in many ways just as much about the rice and seasonings as it is about the fish.

This sushi cooking class will dissect the flavours and texture of authentic sushi rice. You will make nigirizushi (pressed sushi with toppings) and makizushi (sushi rolls). Avocado is excellent, but what to do when it is not in season? You will learn how to season and treat vegetables to make them taste and look fantastic.

If you like sushi (who doesn’t?), this cooking class will elevate your sushi appreciation to the next level.

To make it a complete and fulfilling Japanese meal, this class is accompanied by miso soup, Japanese roasted vegetables and salad, dessert and Japanese hot tea. Sushi etiquette also applies around the dining table!

Note allergens: sesame seeds, seaweed, soy sauce containing gluten

Menu:
- No fish 'tuna' sushi
- No fish 'salmon' sushi
- No fish 'eel' sushi
- No egg sushi
- Proper miso soup
- Greens dressed in deep roasted sesame dressing
- Miso glazed roasted seasonal vegetables
- Black sesame ice cream with crisps and raspberry purée
- Roasted barley tea (sugar-free)

Participants will learn how to:
- Prepare authentic and perfect sushi rice – every detail matters!
- Make vegan dashi – one of the two ‘pillars’ of the flavour of Japanese cooking
- Transform humble vegetables into exciting, vibrant, and tasteful sushi
- Organise and decorate your sushi on a Japanese platter
- Observe sushi etiquette
Aswell as enjoy the meal together at the end of the night.
