We’re running our popular Gin Immersion workshop as a small-group session this summer in our Lab on Waiheke Island. This practical gin-making course will teach you everything you need to know to begin distilling your own gin, and creating your own bespoke blends.
In this full-day workshop, The Alembics Lab's founder Jill Mulvaney shares her knowledge of botanicals, recipes and structuring blends, then guides us through two different gin distillations. You'll also get to try your hand at blending with quintessences (single botanical extracts) to train your palate and try out your own recipes. This is where many artisan and commercial distillers began their gin distilling journey - and above all it's FUN!
These are small-group workshops (usually 5-6 people) held in our own Lab, where you will get hands-on distilling and blending experience.

You Will Learn:
- Neutral Spirit: what your base spirit adds to the flavour profile of your gin.
- Botanicals: an organoleptic tasting of our main gin botanicals.
- How to structure a gin blend (both classic and contemporary)
- How to distil your gin from start-to-finish. We put our blends on to distil using two different copper alembic stills.
- Break for lunch
- Blending with quintessences
- How to finish off your distillation - when to stop, proofing and tasting
- Everyone gets samples of our day's distillations to take home.

Getting Here
Ferry’s depart from downtown Auckland, and take approximately 45 minutes. If you are not staying on the Island, we recommend an 8am ferry to arrive in plenty of time. You can easily bus to the venue—public buses depart from the ferry terminal at Matiatia. All three buses A, B and 502) will get you here—just ask your friendly driver which stop to get off at to get you to Moa Ave.

The Lab is an easy 10 minute walk from the shops and cafés of Oneroa Village.
