Enjoy an evening of Mexican food and culture 

Calling all foodies! You are invited to a one-off dinner showcasing Mexican food, ingredients, techniques and recipes. Chefs Rodrigo Quirarte and Luis Guajardo will share the cultural history of each dish and explain how traditional food relates to everyday contemporary life. From abuela’s (grandma’s) home cooking through to sampling some street-food specialities – you’ll get to experience it all.
  
Starters: 
Guacamole with lime-toasted grasshoppers and home-made corn chips 
Queso fundido with chorizo 
  
Mains: 
Family-style taquiza served with salsas and toppings, with stacks of tortillas for a DIY taco experience featuring: 
Cochinita pibil – Pork shoulder in an achiote adobo, wrapped in banana leaves and roasted 
Tinga de nopal – Tender Mexican cactus cooked in an orange and smoked chipotle sauce 
Puerco en salsa verde – Slow-cooked pork in tomatillo salsa 
Picadillo de lentejas – Lentil and veggie stew in a tomato and cumin sauce 
Frijoles puercos refritos – A classic refried pinto bean puree with Mexican spices 
Arroz rojo Méxicano – Rice cooked in tomato and spices 
  
Dessert: 
Traditional churros served with chocolate sauce and salted caramel. 
  
Everyone will receive a little souvenir of the night – a detailed recipe for Mexico’s much-loved margarita.
