Local 'home kill' butcher, Kieran Baker 'KJ', formerly of The Naki Butcher and more recently new owner of the Mad Butcher franchise in New Plymouth, has been mastering his butchering skills for more than 20 years.
A keen hunter and fisherman, this workshop is aimed at the hunter-gatherer who is keen to turn wild game into sausages. Learn about the ingredients, fat content, tools and techniques on how to get a good tasting minced game mixture into casings. KJ is a master at storytelling so you will no doubt have a laugh or two as well!
