From the Chef:

Our dish was designed around the star Tupu-ā-nuku; this star is connected to “Tupu” meaning to grow and “Nuku” Earth.

I have a love for utilising fresh seasonal produce, foraging and using root vegetables grown locally, these elements combined with the use of a pigs trotter which connects the animal to the earth we have created an exciting and delicious menu for you to enjoy over the festival that helps resemble and honour the star Tupu-ā-nuku.
