Combine an expansive coastline with two archipelagos islands, the Balearics and the Canaries, you get a wonderful array of fish and shellfish that are all elements synonymous with the Spanish diet. Cooked in the traditional spices of Spain, saffron, that support and reinforce the flavour in a typical Mediterranean diet. Tonight make calamari with garlic and parsley followed by a delicious Fideua marisco catalana (seafood pasta paella)
